Southwestern CrockPot Sweet Potato and Corn Medly


Day 229.

This is a great side dish. The flavors dance in your mouth---which is a saying I never, ever thought I'd ever say (or type), but there you go. That's what they do.

Simple to put together, but looks great on a buffet table--this is a great dish.

The Ingredients.

--3 med. sweet potatoes (1 1/2 lbs)
--1 can corn, drained
--1/4 cup chopped onion
--2 limes, juiced
--1 tsp chili powder
--1/2 tsp kosher salt
--3 T chopped fresh basil leaves

The Directions.

This is a good recipe for a 3-4 quart crockpot. If you have a larger one, consider doubling for leftovers, or stay close by so the sweet potatoes don't over cook and turn to mush.

Peel and cube the sweet potato into 1-inch or so chunks. Plop them into the crock. Add diced onion, the drained corn, and the fresh basil leaves. Sprinkle in the chili powder and salt. Squeeze the limes, and then toss everything so the seasoning is dispersed somewhat evenly.

Cover and cook on low for 5 hours, or on high for 3-4. This is done when the potatoes have reached desired tenderness.

The Verdict.

A delicious, and incredibly healthy side dish, or in my case, lunch for the next 3 days. The kids didn't like the lime flavor at all.
oh well, more for me!

Maybe I'm just missing it, but it looks like there aren't directions for when to put in the corn. I assume at the same time as everything else?

sounds good. I have sweet potatoes in the pantry, corn and basil in my garden. it's a go for tonight's dinner. I'll let you know how it turns out. hmmmm...wonder if adding chicken would make it a meal-in-a-dish...

Sounds yummy.... am I wrong to assume that you put the corn in with everything else??? Just want to make sure its not something you should hold till the end. :)

Um, I assume we add the corn at some point, too? Just curious if it goes in at the beginning or if it needs to be added at the end. ;)

Sounds like a wonderful autumn side. By the way, should I assume that the corn is added along with everything else...or would it be better at the end so it doesn't get over cooked?

hello steph, i enjoyed the crockpot but 2 out of the 4 dishes i made turned out good..but im still trying. i have a 5qt and its to big, i just bought a 1.5qt coz im only cooking for two. do you think this is enough size for 2persons?its hard to look for a rival crockpot in stores that is 2 or 3 qts. ill still try cooking till i get it right with you as my inspiration

teena, chicken would be awesome with this. yum.

renette, a 1.5 qt will hold about two half chicken breasts and a jar of pasta sauce, so yes, it can be enough for two people. A 2 or 3 qt might be a good size if you find the 1.5 too limiting. If there isn't a temp adjustment on the 1.5, you may want to think about at least a 2qt. If you need help figuring out quantities, shoot me an email.

okay, I made it. it's very good, but I had to eat two servings before I officially decided I liked it. I had to get used to the lime and chili powder taste with sweet potatoes.

I didn't try the chicken, as I mentioned earlier, but perhaps later...for now, just did it as written, but only added in fresh corn I cut off the cob instead of canned corn.

Maybe it's b/c I left out the lime, but this was kind of boring. So, I threw it back in the crock and added cinnamon, nutmeg, ginger, chicken broth, salt and pepper and turned into a soup. Creamed it in the blender, served it with toasted pumpkin seeds, seasoned with cayenne, garlic, sea kelp, and dollop of sour cream (yogurt would work too). It was delicious! Thanks for a good base to great soup!

I am wondering: if I wanted to add beans to this sweet potato and corn medley to make it a complete meal for my vegetarian daughter, what might be a good type of bean to add, flavor-wise? I was thinking of garbanzo beans because they're pretty mild. What do you think?

I made this a couple of weeks ago when Hubby found a great deal on sweet potatoes (Costco! Who knew?!) and the adults and the child all ate it up. My husband is a huge fan of his mom's sweet potatoes (with 1/2 lb of butter and 2 cups brown sugar....eeek!) and was hesitant to try these, but after one bite he was sold! Thanks Stephanie for another great recipe. It's cooking away right now and I'm looking forward to the smell greeting me when I walk through the door this evening.

I made this last week in the quantities in the recipe and my family (even the little ones!) inhaled it! I served it taco style with tortillas, sour cream and sliced avocado. I'm making it again today and doubled the recipe since it was such a hit!

Maybe it was just updated?!

I made this for our Meatless Monday dinner tonight and it's our first vegetarian dish that the husband said I can make again! I served it with a side of Parmesan rice (poor man's risotto) and we both loved it. My picky 4 year old wouldn't try it (normal for her) and my 2 year old ate hers and then some off of my plate. Thanks for another great recipe!

I think you just tracked me down on twitter! :-)
Great question. No, you should be fine with this timing in a large cooker. The timing comes from how full the cooker is--- and I think you will find that a doubled quantity in a 6-quart will still cook on low for about 5 hours, or on high for about 3 1/2 hours.
