I used a "rub", let it marinated for a few hours before cooking, then cooked it for about 6 hours. I cooked it breast side down and all of the meat came off the bone very juicy, tender an VERY flavorful! I think letting the meat marinate was the trick. I almost always marinate or brine my bone-in poultry before cooking.
