Slow Cooker Mint Glazed Lamb

Mint and lamb are a natural fit and this super easy ONLY 5 INGREDIENTS leg of lamb recipe for the crockpot slow cooker is one of the best lamb recipes you will ever use.

Seriously. I have served this to INSANELY picky people and they love it. Like super love it.

Also? This is a good sauce/glaze mixture for other "gamey" meat -- like venison.

I have new and exciting lamb for you. Lamb so good you're going to want to test it out EVEN THOUGH you already love your tried-and-true "but everybody already loves my lamb" recipe.

Slow Cooker Mint Glazed Lamb

The Ingredients.
serves 6-8
 mint glazed lamb ingredients
 (ha. that sticky note has the words "mint-glazed leg of lamb" on it. I probably should have taken that off before I shot the photo. oops.)

1 onion, sliced in rings
4 to 5 pound boneless leg of lamb
1/3 cup prepared mint jelly
3 sprigs fresh mint leaves (about 10)
4 cloves garlic, chopped
1 tablespoon fresh rosemary
1 teaspoon kosher salt
1 teaspoon black pepper

The Directions.

Use a 6-quart slow cooker. Separate the onion rings with your fingers and place in the bottom of your cooker. 

Put the meat on top. I

n a small mixing bowl, combine the mint jelly, fresh mint, garlic, rosemary, salt, and pepper. Smear this mixture on all sides of the meat. 

Cover, and cook on low for 7 hours, or until the lamb is fully cooked and begins  to relax and lose it’s shape.

Serve with mashed potatoes and a spoonful of accumulated gravy (you can thicken the gravy by making a cornstarch slurry: 1 tablespoon cornstarch whisked into 2 tablespoons cold water).

The Verdict.

I have always shied away from mint jelly—it looks like lime jello to me, and I couldn’t figure out why lamb was supposed to be paired with something that smelled like Doublemint gum

  ~ until I tried this! 

Lamb and mint are meant to go together! 

This sweet, salty, and minty glaze can not be beat. It really is a good combination-- good enough to make me want to CHANGE our normal Easter Lamb recipe for keeps.

    I made this for Easter and all I can say is thank you so very very much. I've tried a few times to make lamb with so-so results. I didn't grow up eating it, but my husband and stepson love it so I've wanted to learn how to make it for them. This was a home run. They both were all smiles and the leftovers are disappearing quickly. I don't think I'll ever make leg of lamb without my slow cooker again.

  10. hey - your profile made me laugh! I too am (only recently) obsessed with my slow cooker. I have only made one dish (some crazy pork recipe from a US blog which included pancake syrup) which turned out amazing (say so myself!)
    Anyway - your blog came up on the UK Mumsnet site as a good place to try for good recipes so I'm going to get reading. Obviously I have a HUGE list of things I should be doing instead....but that's the nature of obsession....fee x

  11. Shall have to try this. I might try it with a lamb shoulder, as that's a touch tougher and stands up really well in the slow cooker - it pulls beautifully.

    Hi I have just recently started using a slow cooker and is the best thing ever, to be honest not the best cook in the world ( probably a massive understatement) I've triedlotx of your users do far and all have turned out great. I wondered if this would work with lamb shoulder I'm not a fab of lamb but my boyfriend loves it so gonna try making it for him x x

  15. I too am a new crock pot user; started experimenting shortly after I retired, and now I'm addicted. I just made a leg of lamb recipe that was good, but all of my childhood experiences of lamb included mint jelly, and I wanted that flavor combination. My Welsh grandmother was a first generation American, and she never served lamb without mint jelly. IMHO, it's a match made in heaven, and I'm really excited to try your recipe.

    Would this roast well if I cooked it in my crockpot on high for 3-4 hours? 7 hours is a touch too long for me to make for Easter dinner (need to serve before 1pm).

    If you're going to do high, I'd check it after 4 hours, but it will probably need closer to 5 hours.
    I suggest starting it earlier.
