It is such a weird feeling to not get up and immediately turn on the computer and crank out a new post.

I just did the 5th day of the 30 Day Shred. Jenny is my workout partner, and we're keeping each other honest. The first few days were very. very. hard, but I feel pretty good today, and the excruciating soreness has subsided.
I am working crazily on editing all of the posted recipes for the Ultimate CrockPot Cookbook (coming Oct, 2009, Hyperion), and need to re-cook quite a few to make sure I have the measurements correct. I also need to make some pork.
Americans need their pork. My un-allergic family and friends are going to test out the recipes (from reader suggestions!) and give me an honest verdict. I'll probably make the sauce for me and the kids to put over chicken.
So, I'm here, but not really present. I'll be back. I promise.

We miss you too. Try this pork recipe.
Lemon Pork Chops
4-6 pork chops (bone in are best, jucier)
1 lemon
2 c Ketchup
1 c water
1 onion, sliced in rings
You can brown the pork chops with s & p for added taste, but not necessary. Lay onion rings in bottom of crockpot. Place pork on top. In bowl mix ketchup, water and 1-2 T of Lemon Juice. You can also place a few lemon slices on top of pork chops for added flavor while cooking (be sure to remove seeds). Cook 4-6 hours on high. Serve over rice!!

I bought the 30 Day Shred and will be starting this weekend. I was a part of Jillian's online program for the last 3 months and will just be continuing with her video's. Her programs are great and really work!

We bought a side of pork, so I am keen to try out the recipes.
Hopefully, pork is not one of the things we are allergic to. (If THAT is what is bothering the baby's tummy, I wasted money on a mega amount of meat.)
Hey, if you need anyone else to try pork recipes, let me know. Pork is one of 2 meats that we can eat. Our allergies include: fish, seafood, chicken, poultry. So I am always looking for new pork recipes. LOL
Glad you are slightly back. I miss you being here with ideas for dinner. Try this receipe. Works GREAT on both Chicken and pork. MY kids eat a ton every time I make it.
Apricot pork/ chicken
10 oz Russian Dressing
10 oz Simply Apricot Jam
1 Package onion soup mix
Curry powder to taste ( Aprx 1 tsp)
Value package boneless porkchops
Cook low 6-8 hours or High 4-5
Serve with brown rice to collect sauce. I can eat the sauce with a spoon.

My husband has started openly voicing his disdain for the frequency that I use my Crockpot. The thing is, that I don't use it daily, but it gets used on average around once a week. It all started at Thanksgiving when I did the ham in the crockpot instead of the oven where casseroles were cooking.....

I am still enjoying all of the old posts. Just wanted to let you know that your blog helped me out so much to remember what I CAN eat. So many times gluten free people can't see past the gluten and substitutes. You showed me how easy it was to eat naturally gluten free. And about that pork...take it from me, not everyone needs their pork and trust me, no one want to be around me 10 min to 5 hours after eating pork. I will stick by you and we both can enjoy the chicken. :)
As you edit PLEASE add and Indian section. I love all of the Indian recipes, and even love looking back at past posts to find my favorites, however sometimes I don't have the time.

I'm glad that you are going to add the pork recipes, however would you please post the sauce recipes that work well over chicken. It doesn't bother me at all to have two crocks going pork for hubby and the boys, and chicken for me and the girls!

Oh my goodness. I just finished my first 30 days of the 30 Day shred. It was vicious. It's true that you do feel stronger after the first few days and I can tell that I am stronger and my confidence in what I can do physically is certainly up...but wow. It's not for wimps. Keep it up, Steph! You can do it! :)
I just made the brown sugar chicken using country style pork ribs last week. They are a little fattier but they came out awesome....the meat ended up just falling off the bone so we shreded it and stirred it into the white rice. My kinda picky 10 year old has now asked for "candy pork" every night since.
I do hope you will do more Pork Recipes... because we eat a lot of the pig meats and have a few great crockpot recipes... but would love more!
I'm a mid-year joiner and always a lurker, but wanted to say I've so enjoyed your blog! We used the breakfast risotto at my son's baptism brunch...it was a hit!
I have a FABULOUS recipie for Root Beer Pork that we used at our wedding rehearsal dinner. People are still asking me for the recipie and its been 1 1/2 years since they had it! Sounds wierd, but is really good. Basically is a shredded pork sandwich that is cooked in root beer and has a root beer sauce (somewhat like BBQ) over it. I'd be happy to send it your way if you'd like. Our verdict is that it is a keeper!

So happy you are working on the book. I already told hubby it's on my Christmas list for next year. I just made carnitas in the crockpot. I didn't really measure everything, but here's an estimate:
2 pounds of pork stew meat
1 tsp. garlic salt
1 tsp. cumin
1/2 tsp. black pepper
1/2 tsp. meat tenderizer
1/2 cup salsa
Cook all together on high for 5 hours. Remove pork, shred with forks. Defat and strain juice in crockpot. Add juice and pork back in and cook on high for 1/2 hour. Enjoy with corn tortillas, cilantro, lime juice, and avocado. Yummy

I just recently found your blog and my husband loves the recipes I've tried so far (whole chicken and broccoli casserole). Funny that you mentioned needing more pork recipe because that's what I'm here today to find :)

When I find pork loins on sale, I buy one or two to put in the freezer. When it's time for 'pulled pork sandwiches,' I pull one out and put it in the big oval (still frozen), sprinkle on some seasonings, give it a few shakes of liquid smoke, add some sliced onion and pour a can of beer on it. It can cook for the day. When it's done, it can be taken out and shredded. Drain the beer, return the pork to the crock and pour sauce over to mix. If there's too much meat, put the unsauced excess in freezer bags to freeze for later meals. You can always sauce later.
Tonight was double crockpot night. Split pea soup in the big crock and hot pepperoni pizza dip in a smaller crock. For dipping, I made garlic/cheese breadsticks from dough made in my bread machine.

I just bought the 30 Day Shred and love it! After the first day I could barely walk so I had to take the day off, but have been enjoying it ever since. It's great to be able to get a 20 minute workout in the morning and know that I'm really getting a great workout!
Someone else who can't eat pork! My husband doesn't believe me that nothing but avoidance works with a pork allergy. My mom, my brother and I all can't eat pork due to varying degrees of discomfort (my brother's the one who actually gets hives and serious reactions, Mom & I are "just" very, very uncomfortable).
Make these Carnitas I have posted below, so GOOD!
3 pound pork roast
6 Cloves minced garlic
1 bunch cilantro, chopped
1 teaspoon sea salt
2 T Chili Powder
1 T Black Pepper
12 ounces Black Butte Porter
* Place pork roast in bottom of slow cooker.
* Toss the pepper, salt, cilantro, chili poweder and garlic together.
* Spread around and over roast.
* Pour beer over everything.
* Cover and cook on high 6-7 hours until pork is tender and fork pulls easily.
* Serve with warm tortillas, your favorite toppings and salsa.
I began the 30 Day Shred yesterday after starting to watch The Biggest Loser this season. I just put the dvd in and watched for a few minutes and thought "Wow, this will be so easy!" So NOT easy. But I am going to keep up with it, I want to lose a few pounds before I get pregnant again! Also, I vote for a BBQ pulled pork recipe. Its one of my favorites and for some reason I don't have a good recipe for it yet.

I'm doing the Shred too! I've been doing Level 1 for 3 weeks now. The only thing holding me back from moving on is that my husband says it's cheating if I move on before I can do all the pushups from my toes. Argh! It's a great DVD!

I oiled the inside of 'big oval CP' with olive oil and a brush (no spray stuff)
I just 'cleaned up' a pork loin half and got rid of the excess fat and all the silverskin. Rubbed it down with rosemary salt. The pork went into the crock with a couple of chicken bouillon cubes, a few shakes of liquid smoke and a can of beer.
This will be taken out and shredded (pulled) when it's done. This is my easy pulled-pork with BBQ sauce. Unsauced leftovers will go into freezer bags to become future sandwiches and sauced individually.
Also missed by me! And yet another pork great -- my family loves this and there are few easier things:
Pulled pork:
Pork shoulder, butt cutt
pkg taco seasoning
1 cup water
cook on low 24 hours -- I put on at night, shred before work,eat at night! We eat on rolls, with a bottle of our favorite BBQ sauce on side (for those picky children who don't like any sauce!)
SO... chile verde's one of those lovely pork recipes that, as a 20 year vegetarian, I still miss....
This is close to my mom's.... but she used canned chiles instead of sauce..... hmmmm... and she probably doubled the cumin and garlic. We used to eat it as chile, but some people thicken the broth and serve it in tortillas....
1 1/2 pounds chicken or pork, boneless (shred before serving)
2 cups chicken broth
1 cup green chile sauce
2 cups tomatillos, husks removed and coarsely chopped
2 roasted green chiles, seeded and diced (Anaheim or Poblano work well)
4 cloves of garlic, peeled and smashed
1 medium onion, peeled and diced
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon cumin
1/2 teaspoon sugar*
3 tablespoons oil
2 cups water
So, I made crockpot BBQ pulled pork shoulder tonight. Dry rubbed with kosher salt, pepper, garlic salt, onion powder, paprika, chili. Made BBQ sauce with bottled bbq sauce, soy, dijon mustard, white vinegar, hot sauce. Poured a little olive oil in the bottom, trimmed some fat from pork shoulder. Dropped it in after rub and covered with sauce, sliced onion and cloves of garlic. Cooked on high for 5 hours. Awesome.
I love her work outs they have some of the 30 day shred on demand with comcast cable.
Well, since you are buds with Rachael Ray, you have to include her "Awesome Autumn Stew" (http://www.rachaelray.com/recipe.php?recipe_id=819). I make it with a super cheap cut of pork and let it cook all day in the crock pot. I then serve it over rice, not with bread, and it is soooooooo yummy. You can substitute veggies as desired, but the hint of allspice is what makes it interesting and yummy.
I also make an easy pork recipe at home--may have been shared on an earlier post, but if you need another way to skin--I mean roast--a pig, here goes:
Cranberry Orange Pork
3lb-ish pork roast
1 can cranberry sauce (chunky, not jellied)
1 cup white wine
3 cloves garlic, minced
2 tsp cumin (or to taste)
1 cup orange juice
2 TBSP orange zest (if you have it)
1 med onion, chopped
I brown the roast in a bit of oil and then place it in my crock (I have used a 6qt and a 4qt--the bigger is a little better)
Saute the onion and garlic in the pan (add more oil if needed) until wilty. Deglaze the pan with the white wine. Add the cranberry sauce, orange juice, zest, and cumin. Let simmer for a bit and taste..add more cumin if needed (I love cumin...). When the sauce is tasty, pour over the pork and set on low for at least 8 hours. If you cook on high, it never gets to the "fall apart" stage, so be sure you have time to cook on low.

I'm sort of late on this, but your smoky spiced lamb chops recipe works really well with pork chops too.
One way we really like to fix pork is this:
Mix an equal amount of Greek seasoning and Creole seasoning. Rub it on a pork loin roast. Roast till done. We usually do this in the oven, but everyone knows you can do roasts in the crock pot too... You'd just have to figure the time out.
