CrockPot Lobster Bisque

Day 360.

Merry Christmas!

If you are finding your way to the computer today, I figure you should get something good.

  So you're getting lobster.

  in the crockpot.

  Life is so very good.

  The Ingredients.

3 cups chicken broth
8 oz clam juice
14.5 oz stewed tomatoes (and juice)
8 oz sliced mushrooms
1 onion, diced
1 large leek, diced (just the white part!)
1 tablespoon dried parsley
2 teaspoons Old Bay seasoning mix
1 teaspoon dill
1 cup heavy cream (to add later)
2 lobster tails (to add later)
lemon slices as garnish, and to squeeze in at the end

  The Directions.

Use a 5 quart or larger crockpot, and combine the broth, clam juice, tomatoes, onion, mushrooms, leek, parsley, Old Bay, dill, and parsley.

Cover and cook on low for 6-8 hours, high for 4-5, or until onions are translucent and flavors have melded.

Use an immersible blender to blend into a chowdery broth.

Add lobster tails.

Cover and cook on high for 30-45 minutes, or until lobster tails have turned pink and the meat is fork tender.

Remove lobster tails from crockpot

Stir in heavy cream.

Ladle into dishes, and serve with lemon slices and lobster meat.

You can take the meat out of the tail, and mix it in the soup, or leave it intact and pick at it at the table.

  The Verdict.

We liked this an awful lot.

I'd say it makes enough to feed 4 adults, especially if you distribute the meat from the lobster tails into the soup.

We had a lot of fun eating this, and felt quite fancy.

My kids both liked the lobster, and thought the soup part was "yummy."

But they also thought sucking on the lemon slices was the best part of their dinner.

  2. Merry Christmas to you too!

This looks excellent! Right now we can get lobster for around $5/lb. Bad for the fishermen, but great for the consumer. I'll keep this in my repertoire!

    Merry Christmas Everybody!
Steph-- thanks for this blog. Every day coming here is like opening a Christmas present. I am always excited to see what you have posted.

No lobster here, but we are doing a beef roast in the crock pot as well as enjoying the leftover crockpotted turkey breast from last year.

I'm going easy this year and everyone in the family loves a roast in the crock pot. There is 10 inches of snow in front of my house, there was a 4 pound pot roast in the freezer and no one had to run out to the grocery store!

    Yay!

Merry Christmas Steph! Your gingerbread latte was a special part of Christmas morning. Perfect timing! Thank you.

    I hope you're feeling better.

The lobster bisque looks wonderful and might just show up on New Year's Even around here. Yum-o. But just typing that reminds me that the end of your 2008 project is soon coming to a close. Poor us.

    Since it's Christmas, I'll move on to happy thoughts . . .

Just wanted to wish you a Merry Christmas, Steph!

No lobster here either, although I was tasked with making sweet potatoes for 12-15 people, so my crockpot is being used for Coconut Sweet Potatoes w/Pecans :)

  13. Oh my.... I should have asked for a Lobster Tail for Christmas!
This look yummo, but unfortunately, there are no lobster tails in this part of the world... so I'll see if I can't adapt a crayfish.

Have a very Merry Christmas, everyone!

  16. Oh my--wonderful! That's one of my favorite soups. Usually can't get such fine delicious soup out that's gluten free, so making this recipe will be great.

I got a new smaller crockpot from Mom and Dad so I can try more of your recipes. :-)

    Merry Christmas, Steph!! Thank you!

    Merry Christmas all!!

I asked my mom for a newer crock-pot for Christmas. I have been putting my 16 year old round one to LOTS of use since I discovered the blog in March. She got me a 6 Qt Hamilton Beach. The kind that has the lid so you can take it in the car. Hurray!!

  18. Thanks for posting!
You inspired me to use my crockpot twice today-- we woke up to the yummy breakfast casserole, and then ate the sweet potatoes (with cranberries) during dinner. Thanks for making my life easier!

  21. 3 sons in Portland Maine on Commercial street wharf, has soft shell quarters for $3.49. I would suggest buying the whole crustascean and removing the head and legsafter a brief euthanizing in a pot. Then you can boil off and use the broth instead of clam juice and chicken broth. That's what i di and i am sticking to it. The horseradish scalloped potatoes were a huge hit!

I just made this for dinner tonight and it was a huge hit! We loved it! My husband suggested I add diced potatoes and corn to make it "heartier". I did add shrimp in the last 30 minutes of cooking. Next time I will peel the shrimp and take the lobster meat out of the shell before serving. I just love you website! Thank you so much!

  29. Made this tonight and it was delicious! Divided the lobster tails between the bowls and ladles the bisque over. If you don't have lobster the bisque alone is delicious and worth making, it's more of a mushroom bisque than anything. Well definitely make again.
