Broccoli With Toasted Garlic and Hazelnuts CrockPot Recipe


Day 347.

This is a lemony broccoli that is such a nice change from heavy winterish vegetables. The garlic adds a great depth of flavor, and hazelnuts provide a nutty burst. These are some yummy veggies.


The Ingredients.


2 pounds broccoli florets
1 cup large raw hazelnuts

1 head garlic, peeled (12 cloves)

2 tablespoons olive oil
2 lemons, juiced

1/2 teaspoon kosher salt

1/2 teaspoon pepper


The Directions.


Use a 4 quart crockpot for best results. Wash and trim broccoli, and add to crockpot. Peel garlic, and add with salt and pepper. Add hazelnuts. Squeeze lemon juice evenly over the top. Toss with wooden spoons.


Cover and cook on high for 2 hours, or on low for about 4. This is finished when broccoli has reached desired tenderness. I like my vegetables al dente.

The Verdict.


This was a great side dish to our leftover hickory smoked brisket. The lemon is the predominant flavor, and complements the hazelnuts, broccoli, and garlic wonderfully. The kids picked out just the broccoli pieces.

ooh, I love hazelnuts! I have a hard time finding them, though, except in tiny little bags in the baking aisle. I remember as a kid my dad would buy them in bulk - he'd get a big ol' bag and we'd feast!! I miss that!

I was wondering about the smell when cooking brocolli in the crock? In the microwave, you smell it for the next day, and on the stove too.

Found you by way of Vintage Housewife, and I must say you have taken on quite a challenge!

I have a crockpot, but don't use it much. I don't think I really know how to use it and I am nervous everytime I try it out.

I'll be reading all your recipes for the next hour to help overcome my fear of the crockpot. I'm one of those who thinks its only for beef stew and chili - 2 of my least favorite dishes.

Wow... looks great. I make a similar version with balsamic vinegar, almonds, garlic and roasted red peppers (which you can "roast" in the crock pot with your broccoli).

I picked up hazelnuts at Sprouts Farmers Market. I would think that Trader Joe's would have them (for people out on that coast).

I'm hoping to double the recipie for a (large) Christmas potluck and use my 6 qt crockpot and still have it cook in the 2 hours. Anything you can think of that I should adjust?

Hi Dorinda,

I think doubling it would work just fine in a 6 qt. I'd leave everything the same, but adjust to have an extra 30 minutes if needed for the broccoli to soften. It might not need it though; I'm not sure. Crockpot cooking is definitely a range, and not an exact cooking time.

Thanks, Steph! I ended up doubling the recipie, using my 6qt, and cooking it on low. I started it at 1:10 when I was home on lunch break and by the time I got home from the office at 4:15, the broccoli was done, done, done! Forget the al dente stuff!

So I would probably try it again sometime when I could be home to monitor it - sure didn't seem like it needed any extra time on this bunch.

The verdict - slightly mushy broccoli, but definitely delicious. Got several comments from people who enjoyed it!

BTW - I've been lurking probably since March sometime. I get rave reviews on the salsa chicken recipie and I happily pass your blog address on to GF families who are looking for ideas. Thanks, Steph!

Yeah, I had the same results as Dorinda - 3 hrs on low was WAY too long in my crock pot. For this recipe, make sure to monitor it, at least the first time you make it.
