CrockPot Buffalo Chicken Dip


Day 60!

s-i-x-t-y. I'm amazed too.

It is also February 29! And that means that my url should technically be 366 days... but I screwed up and didn't realize it was leap year when I made it up. Does that mean that I get a day off at some point this year?

In honor of Leap Year Day, I think you should eat snack food all day long because the calories really shouldn't count on a day that only happens every four years. And it's Friday, which of course means that it's mommy margarita day...


I got this recipe from from a reader (who's site is no longer active). followed it exactly, and was so happy that I did, because it was perfect!


The Ingredients:

--1 1/2 cups shredded or diced cooked chicken
--2 cups blue cheese salad dressing
--1/4-1/2 cup tabasco sauce (taste while you are putting it in--some people like more spice than others!)
--1 1/2 cups shredded cheddar cheese


The Directions:


--dump everything into a small crockpot (or put an oven-safe dish into a large crockpot filled with ingredients)
--stir to combine
--cook on high 1-2 hours, or until cheese is completely melted and flavors are melded. Take care not to over-cook, or the salad dressing might separate.
--taste. if you want it spicier, add more tobasco. if you want it to taste more mild, add more dressing.

serve with your favorite chips, celery, french bread or crackers.

    I love this dip too, although I rarely make it... should put it on my menu monthly!!

    (and when I was working on my resolutions, I originally put down 365 too... fooled me til I realized we had an extra day :-))

  4. In Accounting we use 360 days to equal a year. 30 days a month, 30*12=360. So that gives you 6 full days to eat snacks only.

  6. This recipe sounds good. I never thought of putting an oven safe dish in the crockpot. I have a large one. Do you need to put water in the crockpot around the outside of the dish?

    shilah, no, you don't need to add water. The small oven-safe dish (no lid) is just to create a smaller container for the dip to cook in if you only have a huge crockpot. If you use these measurements in a large crock, it will cook too quickly since it won't be at least 50-75% full.

  12. M--thank you for that reminder! Wish Bone has stated that their blue cheese dressing *is* gluten free, and we haven't had any reactions. But, like always, gotta do your homework and use your best judgement.

    My favorite recipe for parties! The only difference (and I know there are a lot of versions of this one) is that I use a jar of wing sauce ( i like hooters), a jar of salsa, a block of cream cheese...so good.

    One of my FAVES! I made it when we had a family gathering in NH and they literally licked the pan clean. I was just reading your blog and I was liek "I wonder if I can make Buffalo Chicken Dip in the crock?" and then I saw your post! I'm definitely going to try it.

  29. I've made this before, and it's delicious. I'm pregnant now and have had a serious craving for blue cheese, so I'm excited to be making the dip again tonight. Because it is well heated and served hot, it's safe for me and the baby to eat the blue cheese.

    (I just hope I don't get sick from the tiny uncooked smidge that I licked off of my finger without thinking.)

    I make buffalo chicken by putting just buffalo sauce and chicken in the crockpot. We use it to make sandwiches or serve it on top of cauliflower mashed potatoes when we are watching carbs. We don't put in any cheese. Yum Yum

    Being from Buffalo, and have always made this receipe in the oven.....you need to use Franks Hot Sauce, creme cheese and not as much of the blue cheese. You can also add chopped celery to this as we always serve our wings with celery and bleu cheese on the side.

  32. Steph - can you cook this on low for 2-4 hrs or does it need to be higher and for a shorter time? Also, I have a 2qt pot - would that be small enough?

    absolutely. a 2 quart is a perfect size. My new 2 quart lets a lot of steam and moisture out through a vent hole. if you have that problem, put a layer of foil down and then the lid, or use a folded piece of foil to seal the gap/hole.

    low is great----you're just heating through and melting the cheese.

    I had a recipe similar to this that I always make in a large oven pan to serve at parties! NOW I can make it in my crock pot!!!

    I doubled this recipe because I only have a 5 quart cooker and this recipe seemed too small for it. So I have leftovers (I'm going to put it over a salad tomorrow!) But I used canned chicken that I had on hand, I used Marie's light bleu cheese and since I had very little hot sauce, I actually used some jalapeno juice from a jar that I have in my fridge (I obviously LOVE the spicy, lol).

    It was GREAT!!!

  36. I have been fantasizing about this recipe for months. Seriously. I've lost sleep over it. I'm finally going to cave in today and buy a 1.5 qt crockpot. Just waiting for traffic to die down before I brave the streets and aisles of Target.

    One thing I will change though... I'll probably replace half of the cheddar with half a block of cream cheese (or neufchatel).

  37. I bought your cookbook today and am very excited to have it. Your blog has changed my life. As a non cooking person, the celiac diagnosis was very overwhelming. Add Chronic Fatigue Syndrome to the mix and you have kitchen disaster. There was no way for me to conquer gluten free cooking and my husband had to take over. We just made do. Thanks to your blog, I can make dinner when I have the energy in the morning and later when I am totally exhausted, voila, dinner is done! I will still use your blog to find the recipes and then look to see if they are in the book. Have you ever considered adding the cookbook page to your recipes on the blog? I think it would be a great addition. Oh, and my family would like to thank you from the bottom of their hearts too. They especially like Pomegranate Beef, Korean Beef Tacos, Leg of Lamb, Indian Butter Chicken and, and, and.....
