Slow Cooker Corn Chowder Recipe

Day 7.

crockpot corn chowder

Wow. This is a total keeper recipe. It is creamy, nutritious, light and healthy all at the same time.

I used a recipe found on page 193 of Slow Cookers for Dummies



The weird thing though, is that it was a recipe in a slow cooker book and you are supposed to make it on the stove-top, using the "master chicken broth" recipe from the book.

I cooked it all the way in the slow cooker, so, technically it's my recipe.

Or at least that's my story for when I get sued.

The Ingredients:



  • 2 quarts of chicken broth
  • 1 small onion
  • 1 red pepper
  • 1 peeled and chopped carrot (I used a handful of baby carrots)
  • 2 (16-ounce) bags frozen corn (I used Trader Joe's roasted corn, which I highly recommend, the flavor is smoky and wonderful without any added salt)
  • 2 medium potatoes (I used 6 mini white potatoes)


Directions:

Finely chop the onion and brown in a tablespoon of olive oil in a medium saucepan.

You want the onion to be cooked, but not totally translucent since it will continue to cook in the slow cooker.




Finely chop the carrots and the red pepper. I used my pampered chef chopper. I love that thing.



Wash and coarsely chop the potato(es). I kept the skin on---it's up to you.

Dump all the veggies into the stoneware.

Add the bags of frozen corn.

Empty both cartons of chicken broth (2 quarts; 8 cups) on top.

Plug in your slow cooker and set on high for 4-5 hours or low for 8-9 hours.



This is the tricky and totally fun part: Use a hand blender to chowderify.

If you don't have a hand blender (you really should get one...) you can-- VERY CAREFULLY because OMG it is HOT. HOT!!!! See the Ove Glove?!-- pour into a blender and pulse to desired consistency. I left some chunks of corn and a few veggies, but tried to get rid of most of the potatoes.


The Verdict.

The kids ate it! My parents came for dinner and they enjoyed it, also.

And, since it's pretty much straight corn, I'm, um, feeling very clean and light.

  3. For sometime now I was toying with the idea of getting a crockpot. I didn't have much ideas for recipes (we are vegetarians and it is difficult to find vegetarian recipes on the net!).

    I will buy one soon however and try out variations of your recipes.

    Anu, I have only had experience with Rival crockpots. I have owned four so far. The first one I got during college was a 4 qt round with a plastic top that my mom still has and I have a 1 1/2 qt mini with a plastic lid. My current one is a 5qt oval with a glass lid that I adore and it comes with a handy-dandy carrying case for potlucks, etc.

    I did own a round 5qt Rival we received as a wedding present that died after about 6 yrs of faithful use.

  10. I absolutely love my crockpot and really should use it more often than I do. I am going keep checking to see what you are making. I am going to try the corn chowder tonight!!! Needed something for dinner and I have all ingredients on hand.

    I am trying tons of your recipes lately since I love using my crockpot. I have a new crockpot, ok "slow cooker", that has 3 different size inserts, to use depending on the quantity of food you are making. It is the BEST and has made all the difference in the world in terms of how my crockpot dishes turn out. Anyway, I tried the corn chowder the other day and it was quite good. I ended up having to add a bit more salt (as much as I didn't want to...) to make it taste more flavorful. But I really liked using the Trader Joe's roasted corn. Couldn't get the kids to eat it, though. Oh well, gotta keep offering them good stuff and one of these days they'll catch on. Bought all the ingredients for the Pomegranate Beef and will be making that later today (sounds delicious). Thanks for the great recipes!

    CH, a big yes! on how good the roasted corn is, and how it makes all the difference in the world in this recipe. Don't worry about the salt---a little bit is better than a whole bunch.

  17. Just wanted to point out that I found this under vegetarian recipes, and the first ingredient is 2 quarts dead chicken broth. Hahahahahaha. Ok well I found if funny anyway. I'm not really a vegetarian though. I love me some dead chicken. :D However, there are vegetarians afoot, so I substituted vegetable broth, and it was fine. I don't have a Trader Joe's here, I am so jealous.

  19. I made this chowder yesterday - we LOVED it!!
    I didn't have a red pepper, but did have a few slices of cooked bacon in the fridge - they are both red (kinda) right?
    Next time I might add a bit of salt - but not much.

  20. Hi Steph - I found your website in November I think, but I hadn't made any of your recipes until yesterday. I made this yesterday. I did however change it all up. I didn't have the time to go to Trader Joe's but I did have some canned corn. So i used canned corn, vegetable broth - I didn't have quite enough so I added a little skim milk in, I also added a stalk of celery some thyme and some salt and pepper - since I didn't use as much vegetable broth. It was excellent!

Recipes are considered to be 'instructions' or 'equations' and as such cannot be copyrighted. The color commentary and the whole collection can be copyrighted, but a single recipe consisting of a list of ingredients and the cooking directions is safe and sound.

  25. Ok so I tried it and it was okay but then after pureeing it? I found it kind of too light or something. Like not enough texture. SO I added a few more potatoes some extra corn and a pound of chopped Kielbasa and a little garlic. That added some zip. Gonna try the new version tonight for dinner. ! LOVE your BLOG!!!

    The little bisquit is from a batch of drop bisquits from the back of the Pamela's GLuten Free Baking Mix bag. If you aren't gluten free, I'd do Bisquick drop bisquits, or some of those Pillsbury ones in the tube.

  29. This was wonderful! I only did a few tweaks: I blended 1/2 the frozen corn, the red bell pepper, the carrot and three potatoes in my Kitchen Aid with the chicken broth before adding it to the crockpot. This way I wouldn't have to blend the hot soup. I also added diced, cooked chicken and one can of evaporated milk during the last hour of cooking. Thank you for these great recipes and feedback!
