Chicken Nachos CrockPot Recipe


Day 31.

Yay! A whole month of CrockPotting!


I'm pretty sure this will be the last of the Super Bowl Sunday recipes, because I have eaten so much the last few days I'm ready for a fast. If you are in desperate need for Super Bowl Snack Ideas, the Appetizers tag should take you where you need to go.


I'm excited to participate for the first time in Slow Cooking Thursday hosted by Sandra at Diary of a SAHM (stay-at-home-mom). Please take the time to click around to all the different blogs and submitted recipes. I have 11 more months to fill, and am thrilled to have a bunch to choose from. Sandra has created an online guide to all of her recipes here.



Ok. I made nachos with raw chicken. Just for all you Internet People who don't like browning meat or pre-cooking it. Guess what? It worked, and it's been 3 days and I haven't keeled over yet with food poisoning.



The Ingredients:

--2 cut up raw chicken breasts (or by ALL means, cooked and chopped!)
--large package of Velveeta or other "cheese product"
--can of tomatoes and chilies
--stuff you like to put on nachos: beans, sour cream, olives, etc.


The Directions:

--put raw chicken in bottom of crockpot (if you are using already cooked, melt the cheese completely first, then stir in)
--cover with cheese slices
--dump in entire can of tomatoes and chilies (that means don't drain)
--cook on low for 6 hours, or high for 3-4.
--pace house wondering if the raw chicken was a good idea or not
--stir thoroughly and serve over your favorite chips
--doctor up with beans, sour cream, olives and whatever else makes you happy


--realize that the chicken cooked without help and share brilliant discovery with The Internet.

I should mention, for the readers that don't realize about price differences between the US and Canada that we pay about $11 for a 1 lb box of Velveeta up here and you guys can get it for $4.50 or so???

It's good stuff, I admit I eat it on occasion :-)

woah, CS! That's not in your budget. ;-)
actually, velveeta isn't in ours, either. I try my hardest to stay away from it,but sometimes you (I) want that smooth salty flavor. And it's gluten free! xoxo

WOW CS, That sucks! $11 for Velveeta. That's just wrong! Maybe I should rethink my thoughts about moving to Canada. LOL

CL, this sounds good. Reminds me of a recipe my mom uses for Dip. She Boils Sausage then adds Velveeta, 1 Can of Rotel (sp?) and Cayenne pepper to taste. This is always a big hit during get-togethers and could be done in the crockpot!

BTW, last night for dinner I took UNCOOKED pork chops (LOL) and BBQ sauce and cooked it in the Slow Cooker for 3 hrs on high. It was good and tender. Needed some more spices/seasonings, but was still good none-the-less.

Have I mentioned lately that I LOVE my crockpot now?

I do have one question for you....Have you tried using the Reynolds Crockpot Liners?

"THANKS" for stopping by. You recipe sounds so good. I may have to try that sometimes myself. I don't use my Slow Cooker alot. Sometimes I use it for cooking Beans and mostly for my Roast. I like it where you can just throw all the ingredients in one pot tho and let it cook away. "THANK YOU" for sharing your recipe. I have noticed that Sandra hasn't put up Mr. Linky yet. I bet if you waited and stirred in the Velveta after the chicken was cooked, you wouldn't have to worry so much about the raw chicken. Just trying to help you since I feel like one of those lazy people who pushed you into throwing the stuff in there raw!!!

This looks yummy! Might have to watch the Superbowl just to make the food!

I think the honey mustard and apples would be just as delicious with chicken. In fact, even tastier perhaps. Beef I don't know, but it could work.

I have to say, I use my crock pot at least once a week and I'm kind of addicted too! On the days that I have a meal planned for my crock pot I LOVE dinner time! So easy! This recipe looks great. I made something a little like it that uses Nacho cheese condensed soup last night. Yum, yum! Anyway, thanks for sharing your recipes. I am always looking for new ones for my menu planning! : )

Congrats Steph on one month of the crockpot life-thanks again for another yummy treat, really who doesn't LOVE nachos? (funny, just a little bit ago at the store I stood for a few minutes with a box of velveeta in my hand-I felt I must buy it but couldn't really think of what to do with it-now I am kicking myself!)

Curious why you do the gluten free? (not because I'm nosy but because this may be in future...)

you aren't nosy. My 18mos (at the time) old was vomiting on and off for about 4 months. The ped recommended seeing a ped. GI. We saw the specialist who pretty much diagnosed her on the spot as having celiac--allergy to wheat, barley and rye. We decided as a family it would be easier for us all to go GF. The rest of us currently don't test positive, but are pre-disposed.

This recipe didn't turn out smooth and melty like I was expecting, though that may be because I used 2% Velveeta instead of the full fat version. My 14 y/o thought the concoction, oddly enough, tasted like tuna fish.

Hey crockpot genius, what size of crock did you use for the chicken nachos. I am going to use the 4qt but I don't want to mess up my gooey, cheesy goodness..you deserve a reeeel award, maybe we should have a convention and you be the guest speaker? love this blogggggg...and I have thankfully gained an extra 10lbs. what about real woman of genius, like the beer commercials?????love ya bye

lol. I'm all weepy after watching the convention speeches.

I don't remember what size crockpot I used for this. I probably used a 6qt, because I didn't borrow my mom's 4qt until March. But, I think the 4qt would work just fine. You're really only melting the cheese and cooking the chicken. The 4qt should handle it just fine.

Once again, no worries on the raw chicken if you take grapefruit seed extract. Or soak the chicken in the GSE drops and water before cooking. Kills salmonella, e-coli, etc.

I use raw chicken in the slow cooker all the time (even have used frozen/raw chicken) and have cheated death many times over.
